Lemony Syrian-Style Artichokes (A Simple, Healthy Kosher Classic)

I didn’t even plan to share this…

but every time I make it, someone asks for it.

This lemony artichoke dish has been on my table for years.

One of those quiet staples that somehow never gets old.

It’s bright.

It’s simple.

It tastes like effort — without actually requiring much.

 I started making this recipe during a season when I needed meals that felt good and made my body feel goooddd.

Quick enough for real life.

But nourishing enough to matter.

 Over time, it became part of our regular Syrian Jewish menu in my community — the kind of dish that shows up again and again because everyone feels better after eating it.

 

As a dietitian, I love artichokes for more than just their flavor. They naturally support digestion, liver detoxification, and gut balance. And when food supports your body at that level, everything just feels easier — energy, digestion, even mood.

Lemon Artichokes

 

A simple, lemony Syrian-style classic

 

Ingredients

  • 2 (14-oz) bags frozen artichoke bottoms
  • ½ cup fresh lemon juice
  • ⅛ cup extra virgin olive oil
  • 1 teaspoon garlic powder
  • 1 cup dry white wine (one you actually like)
  • Salt to taste

 

Directions

Defrost the artichokes and cut into quarters

  1. Preheat oven to 350°F
  2. Add artichokes to a 9×13 baking dish and mix with lemon juice, olive oil, garlic powder, wine, and salt
  3. Cover and bake for 1½ hours until very soft
  4. Uncover and bake an additional 20 minutes to deepen the flavor
