There are many styles of za’atar depending on the region—Syrian, Lebanese, Israeli, Palestinian—and the flavor can vary wildly depending on:

  • The freshness of the sumac
  • The ratio of sesame seeds

 

 

I strongly encourage you to walk into a Middle Eastern market if you can. The depth and brightness are unmatched.

That said—Trader Joe’s does sell a za’atar if that’s what’s accessible (just know it won’t have the same punch).

 

And yes… flying to the shuk around the Middle East for spices is always encouraged 😮‍💨✈️🥹

  • 4 large eggs
  • Salt and black pepper, to taste
  • 2 tbsp lemony za’atar (preferably from a Middle Eastern market)
  • Olive oil, for greasing the pan
  • 4 tbsp marinara sauce (or preferred pizza sauce)
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded muenster cheese
  • 1 tsp oregano
  • ½ tsp garlic powder
  • ½ tsp Aleppo pepper (or to taste)
  • Fresh parsley, for garnish

 

 

 

 

 

Directions

 

 

1. Prep the Egg Mixture

 

  • Crack the eggs into a bowl
  • Add salt, pepper, and lemony za’atar
  • Whisk until well combined

 

 

2. Cook the Egg Base

 

  • Generously grease an oven-safe skillet with olive oil
  • Pour in the egg mixture and cook over medium heat until mostly set
  • Carefully flip to cook the other side briefly, then turn off the flame

 

 

3. Add the Sauce and Cheese

 

  • Spread marinara evenly over the omelet
  • Sprinkle mozzarella and muenster on top like a pizza

 

 

4. Season the Top

 

  • Add oregano, garlic powder, and Aleppo pepper

 

 

5. Broil or Melt the Cheese

 

  • Broil for ~5 minutes until bubbly and golden
  • OR cover and melt on low heat if not broiling

 

 

6. Finish and Serve

 

  • Remove carefully with an oven mitt
  • Garnish with fresh parsley
  • Slice like a pizza and enjoy

  • No broiler? Cover and melt on low heat
