Simple Almond Butter Muffins

Ingredients
- 1 c almond butter
- 2 eggs
- 2 Tbsp pure maple syrup
- 3/4 c almond flour
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- pinch of salt
- optional 1/8 cup dark chocolate chips (Or 1/2 size in minis)
Directions:
Preheat the oven to 350 F. Spray with non-stick cooking spray or line a mini muffin pan with paper cupcake liners. In a mixing bowl, combine the butter, eggs, and maple syrup. Stir to combine. Add in the almond flour, baking soda, cinnamon, and salt. Stir to combine and fold in optional chocolate chips. Scoop the batter into your prepared muffin pan using a small cookie scooper. Bake the muffins for about 14 minutes, or until they just test done when a wooden skewer or toothpick is inserted into center. Transfer the muffins to a cooling rack and cool. Enjoy warm or room temperature.
